Even die-hard meat-eaters will find this Moroccan vegetable stew deliciously satisfying, not just because it’s filling, but robust spices and textures have a way of tricking the palette like a trompe l’oeil for your tastebuds. But feel free to add chicken or lamb. If using meat, I highly recommend adding bone broth in place of water.
